Our Family Christmas Cookie Recipes: Week 4 (Part 1)

Growing up, Brown-Eyed Susans were always one of my favorite Christmas cookies. Although I always felt they should have been called Brown-Eyed Sharleens! After all, I was the only child out of five with brown eyes. That was until my baby brother and sister came along making us a pack of seven and lo and behold they both had brown eyes! Oh well, I was unique for the first 12 years of my life at least!

Brown-Eyed Susans have an almond flavored short bread cookie base with a chocolate frosting center. When I was a child, I would eat the outer edges of the cookie first and save the chocolate center for last. My husband likes to pair these cookies with a cup of coffee and has been known to eat them for breakfast. However you eat your Brown-Eyed Sharleens, I mean Susans, you’ll be sure to enjoy them!

Brown-Eyed Susans


  • Cookie:
  • 1 C. butter or margarine
  • 3 tbsp. sugar
  • 1 tsp. almond extract
  • 2 C. flour
  • 1/2 tsp. salt
  • Frosting:
  • 1 C. confectioners sugar
  • 2 tbsp. cocoa
  • 2 tbsp. hot water
  • 1/2 tsp. vanilla
  • almond halves blanched


  1. Cookie:
  2. Cream the butter
  3. Add the sugar, almond extract, flour and salt
  4. Roll level tbsp. of mixture into balls
  5. Place on a greased cookie sheet and flatten slightly. Press an egg or spoon into center of each cookie
  6. Bake in a moderately hot (400 deg) oven for 10-12 mins
  7. Frosting:
  8. Combine the sugar and cocoa
  9. Add the water and vanilla
  10. Put 1/2 tsp. of frosting on each cookie, place blanched almond half in center
