Healthy Red, White and Blue Inspired Meal


This weekend in the US, we’ll be celebrating the 4th of July. There will be parades, fireworks, festivals and of course lots of food! To get the party started here’s a quick, easy and healthy red, white and blue inspired meal!

It wouldn’t be a true 4th of July meal if it didn’t involve a little grilling! For the main course I chose tilapia (white) with an artichoke brushetta topping (red). This is something my local Wegmans grocery store carries already prepared and ready to cook. I picked up a set of two cedar grilling planks by True Fire Gourmet and as per the instructions on the package soaked in water for 2 hours.

Next I simply placed the tilapia on the grilling planks and then on a preheated grill for about 15 minutes at 400 degrees F. The cedar grilling planks give the tilapia a nice sweet-smoky flavor and also helped to keep the fish from drying out.

For a healthy side dish, I made roasted red, white and blue potatoes with rosemary.

Here’s what you’ll need:

  • 1 lb. bag of  Baby Medley Potatoes
  • 2 T. Extra Virgin Olive Oil
  • Fresh Rosemary
  • Ground Pepper and Sea Salt

Begin by washing and quartering the baby medley potatoes. Place on a baking sheet and cover with olive oil, rosemary, salt and pepper. Broil for 15 minutes, stirring occasionally or until potatoes are soft in the center.

To finish my red, white and blue inspired meal, I made a healthy dessert that I’ll share with you tomorrow! In the mean time, here’s what you’ll need to pick up from the store:

  1. Bananas
  2. Black Berries
  3. Strawberries
  4. Frilled Picks in red and blue
