Earlier this week, I shared some quick and easy breakfast to go suggestions and a yummy baked egg muffin recipe to help make those hectic school mornings a little easier. Today, we’ll tackle lunch with a southwest inspired lunch wrap recipe and some tips on preparing healthy packed lunches.
Most of my lunches are either salads or wraps. One of my favorite wraps is this southwest inspired lunch wrap recipe that I’m sharing with you today. This wrap could easily be made into a salad if your like me and get bored with eating wraps everyday or with the addition of some brown rice, a burrito bowl for a hearty dinner.
Here’s what you’ll need:
Mash the avocado and cilantro together. Mashing the cilantro brings out the flavor. Spread the hummus and avocado mix onto the wrap. Layer with lettuce, corn, black beans and tomatoes. Close wrap and enjoy!
To help make the task of preparing lunches quick and easy for myself and my family, I usually spend a little time on Sunday evening preparing some healthy packed lunch options. I start by washing, peeling and chopping all of the vegetables that my family will use through out the week. I put them into snack size bags to make grabbing and going easy. I do the same for snack items. I like to buy snacks in the larger bags since it’s more economical, and then divide them out into the snack size bags. Lastly, I wash, peel and chop all the ingredients that I plan on using in my lunch salads and/or wraps for the week. This changes week to week so as to keep lunch interesting. These ingredients go into glass pyrex bowls and any left overs get used at the end of the week for a creative dinner meal. In this case, I’d probably add some rice and chicken and make a Chipotle inspired burrito bowl, yum!
