Ginger Honey Bellini
The Bellini was invented by Guiseppe Cipriani, owner of Harry’s Bar in Venice. A traditional Bellini is made with Prosecco and puréed peaches. The drink’s color reminded Cipriani of the color of a toga that a saint was wearing in a painting by Giovanni Bellini. You gotta love a classy drink inspired by a toga. Toga! Toga! Toga!

Bellini’s are perfect for a Mother’s Day brunch. I wanted to give the tradition Bellini a twist, so I incorporated some ginger and honey. You’ll need sparkling wine or Champagne, ginger brandy, peach nectar, honey, and candied ginger to garnish.
You can purchase candied ginger or make your own. It’s very easy, I used Alton Brown’s candied ginger recipe. Since I didn’t need a pound of candied ginger around (because I’d be eating it all), I scaled it down. I used fresh ginger and my candy had some extra zing to it!
